Physicochemical composition and functional properties of bee pollen produced in different locations

This work aimed to investigate the physicochemical and functional composition of bee pollen produced in different municipalities state Rio Grande do Norte/Brazil (RN) commercial samples other places. To perform these experiments, dehydrated were crushed subjected evaluation, instrumental color, fatty acid profile, evaluation presence bioactive compounds [Total Phenolic Compounds (TPC), carotenoids] antioxidant activity (reduction DPPH radical). The pH varied from 4.55 5.08, protein 19.01% 29.71%, ash 2.44% 4.27%. All showed a yellowish-red hue (a* b* positive), Touros/RN/BR stood out with lighter color (L* = 32.91). higher (p < 0.05) percentage saturated acids (41.60%), whereas collected Taipu/RN/BR had monounsaturated (7.44%). Pollen low concentration Total Carotenoid Content (TCC) (0.81 22.82 µg/g), as well high content TPC (1.79 2.28 mg GAE/g) (1.40 5.70 µmol TE/g) when compared consulted literature. According obtained results, we could infer that locations variations composition, coloration, which reflects geographic diversity inherent production sites.
